Elberta peaches are one of the most popular varieties for home canning because they are completely freestone, have good texture and the skin can be blanched off fairly easily. The variety is thought to have originated in Georgia in the 1870's. Many Elbertas are picked green so that they can be shipped, but ours are picked more yellow for better flavor.
